BOCCINCINI

Bocconcini are mild flavoured, fresh mozzarella cheese balls which are about the size of cherry tomatoes. The word Bocconcini means small mouthful in Italian and as such they are great served as appetizers with cherry tomatoes

Because it has no rind Bocconcini is often sold in tubs filled with a liquid containing whey or water. They do not keep well and are best eaten within a few days of their manufacture.

Essentially, Bocconcini are small pieces of fresh mozzarella that undergo no further ripening after being packed in slightly salty water.
