Mozzarella Cheese is a semi-soft Italian cheese that is traditionally used on pizzas, though it is also used in a variety of recipes.

It is a firm but creamy cheese that tastes like fresh milk with a slightly sour edge to it. It melts well and has a unique stretchiness, making it the classic pizza topping cheese.

Mozzarella is a fresh or unripened cheese, ideally eaten within hours of manufacture. The taste deteriorates quickly with age hence there is quite a difference in flavour and texture between fresh mozzarella and mass produced mozzarella. Fresh mozzarella is smooth, mild, and slightly sweet/sour with a distinct milk flavour. The texture is creamy and much softer than the rubbery and often dry processed mozzarella.
